Food studies

Since September 2011, I lead a PhD research on food patterns in developing countries, for the CIRAD, specialized on agriculture and food security.

The title of my research is currently "Food models dynamics and modernity: determining factors implied in animal products consumption in India".
Keywords: food patterns, India, animal products, vegetarianism

From an operational perspective, this research will enable me to better understand the determinants of animal product consumption’s increase, at stake in food sustainability debates. From a scientific standpoint, it will serve to (1) a better understanding the cultural construction of food categories; (2) draw a sociological definition of food accessibility, and (3) to discuss the food transition concept.
CSH has granted me a fieldwork scholarship. I’m conducting interviews in Delhi.
